This unique raw sheep's milk cheese is smoked.  Its outward appearance is reminiscent of a sausage while the interior is the caramel color you would expect from a smoked cheese. The exterior is rustic looking with a dusty, brushed natural rind, and its evenly-spaced series of ridges, as if it were bound with butcher's twine.  It is smoky with caramel-sweet, savory, lanolin notes.
