Tomyere Aged

La Tomyère is a cheese with a cooked, pressed paste, made with raw milk, produced in a mountain area of the Longeville. It is manufactured in copper vats, this cheese to cooked and pressed, then aged from 4 to 14 months on spruce boards. The crust color is brown to dark brown while the dough, tender with a color ranging from yellow to yellow cream, and can have a few holes sporadically distributed throughout. It gives Switz Gruyères a run for its money.

While Tomyère is perfect for any cheese plate, it can also be used in cooking (in salads, in fondue, in tartes, gratin,  or soufflé. It is the perfect match for a fruity white wine from the Jura region of France.
