This DOP cow’s milk cheese is produced in the provinces of Vicenza, Trento, Padova and Treviso. The cheese is white or straw yellow in color with small to medium sized holes. Asiago D’Allevo by definition can be aged anywhere from 2-11 months; ours is Mezzano – aged 5-6 months and is sweet, flavorful and perfect for a cheese plate.
