This artisanal raw sheep’s milk cheese from Cuenca is hand rubbed with lard and fresh rosemary and aged in caves for eight months. Estanislao has been making the cheese for many years. It is full flavored and complex with a long finish that is enhanced by the rosemary. It is really hard to find a great tasting rosemary cheese and our Romao® exhibits no bitterness or steeliness from the herbs.
