Gaeta olives are black, oval Italian olives that originated in a region of Gaeta (hence the name.) These olives may be dry-cured which makes them wrinkled and black in color or brine-cured which makes them smooth and purplish in color. They are very fleshy and with a mild tart and salty flavor. It is known also as Gyeta olives and is primarily produced in Itri which a small hill country and many other municipalities near the Lepini Mountains. These Italian olives are packed with anthocyanin pigment which is a good anti-oxidant and an anti-inflammatory element. Gaeta olives are perfect not just for its fine oil but also as table olives as an appetizer.
