Black Cerignola Olives

Grown primarily in the Puglia and surrounding regions of Italy, this olive can be cured in multiple ways. Also known as Bella di Cerignola, this olive variety gets its name from the small town of Cerignola that is located amongst the open, flat plains of southeastern Italy's Puglia region, where millions of century-old olive groves expand across the landscape. The hot, dry summers and short, mild winters of this region provide the optimal growing temperatures needed for these olives, which in turn helps them grow to their large size! 

You may see it light green, dark green, red, or black. Each color represents a different curing method. The black olives are achieved by both oxidation of the olives during processing as well as the addition of ferrous gluconate in order to keep a uniform black color. This process is almost exactly the same as is done to canned California ripe olives.

Large, fruity, and buttery, this is a great olive to marinate and serve with a variety of appetizers, along with your favorite Sauvignon Blanc.
