Clochette Affinee, means “aged little bell,” thanks to its shape. Like most French goat cheeses it is named after its physical appearance (like buche for log). This seasonal goat’s milk cheese is produced in the region of Poitou-Charentes from March to the end of August with limited quantities. While considered a fresh-ripened cheese, it is actually aged in caves for 30 days to produce a sweet, grassy tang not usually found in a chèvre. The interior texture is fine and smooth, becoming firmer and slightly drier with age. The rind is ivory in color with a gently wrinkled appearance.
