 This Tomme is made with goat’s milk and is lovingly named after the current cheese-makers’ grandmother, who started aging local goat’s milk cheeses in the late 1940s. Hand-made with goat’s milk from local farms, it’s lightly ashed in a traditional manner and has a thin layer of shaved black truffle through the center. The flavor is light and zesty with a subtle earthy note and aromatic after-taste from the truffles. The texture is firm, but smooth and even – melting in the mouth.
