Named after Maréchal de Sennecterre, the man who brought it to the table of King Louis the XIV, Saint Nectaire is a unique and flavorful cheese. Made from the milk of the Holstein and Montbéliarde cows, this cheese is usually cave aged and dried on rye straw. Both of these factors contribute to the smell and flavor of the cheese which can be somewhat intense. Throughout the aging process, the cheeses are washed in brine and water. The development of a yellow or red mold on the rind is a signal to the affineur that the cheese is ready to be eaten!
