Alemar St. James

Meet St. James, Alemar’s first foray into semi-hard cheese. St. James comes from the same high quality, grass-fed, Minnesota milk used in our soft cheeses, and boasts an eminently lovable flavor and texture with something for everyone—firm, but not hard, and flavorful, but not overwhelming.

The idea to make a Tomme came from former head cheesemaker, Craig Hageman. The cheese world is full of many flavors and styles, but when Craig would return home with cheese to share, the one style his entire family (young kids included!) could agree upon was a nice Alpine—more complex and interesting than your everyday American or Cheddar, but without the spice or funk of a blue or washed cheese. And so, he set out to make St. James. The cheese was also designed as a celebration cheese for the birth of his third child, and first daughter, who was born in 2019. 

The name “St. James” comes from  a small town in Southern Minnesota as well as a nod to the song “The St. James Infirmary Blues.”
