Fourme d’Ambert is one of the mildest tasting blue-veined cheeses.
It hails from the Auvergne region in the Highlands of the Massif Central, renowned for its rugged landscape dominated by extinct volcanoes, high wind-swept plateaus, deep gorges, and crater lakes. Rainfall up to 40 inches per year provides the region with lush pastures rich in oligo-elements and rolling hillsides for Charolaise cows.
Fourme d'Ambert is a traditional cheese from the Auvergne region and is one of France's oldest cheeses, legend has it that Druids were particularly fond of the cheese. Its existence dates back to the 8th century. At the time, it was even used as a means of payment, especially for farming the land in Auvergne in central France. Fourme d'Ambert was granted AOC status in 1972 along with its sister, Fourme de Montbrison, but was granted its individual AOC status in 2002.
Fourme d'Ambert is a semi-hard cheese with a distinctive cylindrical, narrow shape, and presents an ivory pâte with deep-blue veins. The cheese is inoculated with Penicillium Roqueforti and is cave-aged for a minimum of 28 days. Fourme d`Ambert is more supple and dense than most blues with a flavor that is savory, nutty. and slightly sweet.
This cheese is distinguished by its rich texture and creamy color. It also has little mold as it is matured in cool, damp cellars.
