This cow’s milk cheese takes inspiration from the Republic of Venice, during a time when the city was at the forefront of the spice trade. Prolific affineur Sergio Moro sources his milk from a handful of farms in the Piave Valley to create unique cheeses that reflect the region’s rich history and terroir.  Condio, meaning “seasoned” in a local dialect, is aged a minimum of three months and is generously rubbed with sesame, mint, parsley, thyme, marjoram, and basil to create a flavor that evokes the exotic lands of the Near East.
