Margot is a Biellese cow’s milk cheese made with blonde ale. Enrico from Caseificio Pier Luigi Rosso takes his recipe for a traditional semisoft cheese called Maccagno and adds Margot beer from a local craft brewery. He then ages it approximately 60 days and finishes it in more beer. The result is a full flavored, beer forward cheese with a delicate balance of sweetness and bitterness.
