This semi-hard sheep’s milk cheese from Romagna is bathed over time in balsamic vinegar and steeped in juniper. The appearance is a dark reddish brown, often spotted with mold as it is not vacuum sealed. Full-flavored with a hint of sweetness, Pecorino Ginepro has a very subtle juniper flavor.
